My favorite Sunday is one in which I feel SUPER productive. With only two days in a weekend, it can be hard to both relax and enjoy oneself and cross off items from the to-do list. But this weekend, we did just that. Saturday was filled with shopping for Fall fashion and dinner with our friends Rodney and Jocelyn. We completely put aside all of our work and remained unplugged to better soak up our day off together. David was incredibly successful at the mall. He scored some shoes, sweaters, and pants. Now officially prepared for the cooler weather, I am excited to see David’s new looks as the temperatures continue to drop. I was excited to have a found a few items too including these jcrew suede wedge boots, this flannel top from Banana Republic and these pants. From the mall, we trekked into town and ate a delicious meal at Shanghai Gate and then chaperoned a dance at school! But it was really Sunday that blew me away. How we did everything we did is still surprising to me. Waking up early we took the pups for a long walk through a dense morning fog. We then made our way through a number of boring but necessary errands including trips to Lowe’s, Target, and Whole Foods. Without even the slightest argument or hesitation we came home and cleaned the house top to bottom. It feels so satisfying to me to clean my home. Breaking up the chores we tackled the various rooms together. It feel so good sitting here now in our spotless nest. After our cleaning session, it was off to tennis for almost two hours of rallies and play. When we finally came home, I sat down to work on lesson plans, quizzes, paper assignments, a conference proposal (fingers crossed!) and a technology blog post for school. While in the midst of the flurry of work, dinner cooked in the background. We celebrated our super productive day with a home cooked meal. This is one of my favorite ways to roast chicken. It is so simple and yet the flavors are delicious and extravagant.
1 roasting chicken
4 red onions cut into quarters
1.5 cups of dried plums
1 bottle of red wine
Salt and Pepper
In a roasting pan, lay the red onion quartered so that they cover the pan evenly. Toss in the dried plums.Open a delicious bottle of red wine. Fill the roasting pan with 3/4 of the bottle of wine. Place the roasting chicken in the roasting pan holder. Tie the legs together with kitchen twine in order to keep the chicken’s shape plump. Cover the chicken in fresh cracked black pepper
Add 2 tablespoons of butter in little clumps over the chicken, sprinkle the chicken with a dash of brown sugar, top with twigs of fresh thyme and bake in the oven at 400 for 1 hour. Take the bird out after the hour and pour the last 1/4 of the wine over it. Return to oven for another 30 minutes.
Remove chicken from the oven and prepare to carve and serve a scrumptious meal.
