Last night after a long Thursday of a long week, I decided we needed a belly warming comfort food. Something that would fight away any colds and, most importantly, something that would fight away the winter blues. A spicy lentil soup with sausage & chard from smitten kitchen was the answer. We used chicken sausage instead of pork sausage (as we are trying to limit our meat intake, but after come up with some anemia from my early vegan only diet, I let myself cheat a little). This dish was super quick, flavorful, and I cannot wait to have it again for lunch and dinner today!
